  • This February, thousands will flock to Milan and Cortino for the global winter sports competition in Italy. You know what that means for those of us here in the states – watch parties. From the fanfare of the opening ceremonies, to the tense photo finishes on sleds, skis, and skates, to the elegance and artistry of figure skating at the highest level, many of us will be gathered around the TV to root for our favorite athletes to take home the hardware.     Recipe: 
    Ingredients: 2 low-carb tortillas; 18-oz can crushed tomatoes; basil, oregano, garlic, black pepper, and a pinch of salt; sliced pepperoni; 2¼ cups shredded mozzarella; 2 pinches grated Parmesan; 2 tsp oil; crushed red pepper and olive oil (optional).  
    Directions: Preheat broiler to high. Simmer tomatoes with seasonings 12–15 minutes. Heat oil in a cast-iron skillet over medium-high; add tortillas; spread 2 Tbsp sauce on each; add ¼ cup mozzarella to each; top with pepperoni. Add optional red pepper and oil. Broil 1–2 minutes until cheese melts and pepperoni crisps; cool briefly and serve.
